Pasteurized Juice Loses Flavor, Aroma and Taste

Over 95% of commercially available juice is pasteurized. Pasteurization is the process by which liquids are heated to very high temperatures in order to kill any potential pathogens in the juice. However, pasteurization also kills a juice's flavor, taste and aroma. In fact, juice manufacturers use flavor packs, an assortment of chemical compunds, to add flavor, taste and aroma back to pasteurized juice. Without flavor packs, most bottled, canned or frozen concentrate juice would be flavorless.
